In two ways : smoked fillet by us ans marinated fillet « Grawlax » with dill, served with a lemon condiment and herbal cream
Marinated mussel soup with vegetables, creamed stock and saffron
Cooked in terrine with pistachio, served with pickles and fruit chutney
The scallops just snacked, mashed celery, celery confit and yuzu emulsion
The filet of trout from Isère pan-fried served with a crunchy fennel roasted, avocado purée, Aïoli sauce with red chili pepper and a saffron emulsion
The revisited tradition : beef stewed with onions, mushrooms, bacon and red wine sauce served with a panfried thin slice of foie gras, smoked potatoes
The shoulder served with a light mashed potatoes, seasonal vegetables and mushrooms, butternut coulis and truffled meat juice
Pan-fried filet mignon, strong blackcurrant juice, corn pancake, preserved squash and popcorn, pear coulis and beetroot
